A is for Apple

If we, in our gin-soaked haze, remember nothing else from those early learning years it’s that A is indeed for apple. That big, red, juicy fruit purported to keep the doctor away with one a day, win us extra points with the teacher and even find the first initial of our true love in it’s peel. Whether piled high in a pie, cooked down to sauce or juiced for convenience we’ve all had some sort of experience with apples in our life.

And while apples come in reds, greens, yellows and combinations thereof, exactly when did they become neon-hued and sour? While we may have become used to the chartreuse cocktail billed as an Appletini, it resembles an alcoholic candy more than what some believe the serpent tempted Eve with.

Let’s see if we can’t come up with something better, shall we?

Surveying the Orchard

Taking a quick stroll through bartending guides and web recipe repositories, the Appletini always seems to have a vodka base (sometimes a flavored vodka but often plain). The other main ingredient is apple schnapps–usually the sour sort like DeKuypers Apple Pucker. It’s not a bad ingredient, really, but I’d like to at least see a little apple juice in my apple martini (I know, shocking), not just booze. What I certainly don’t need is sour mix, citrus soda or cranberry juice mucking around my glass. They’re all find ingredients in their own right (well, except the sour mix–make your own!), just not what we really need here.

What could we add instead? Obvious would be apple juice or you could go even more direct with some apple puree. If you want to invoke the feel of a warm apple pie some vanilla and cinnamon would not go amiss (hello, vanilla vodka and maybe some cinnamon schnapps or syrup), even some condensed milk shaken in for that a la mode vibe. Or you could go a little classier with some Calvados (apple brandy) and a cinnamon stick for a cider-like cocktail.

In Search Of…

Caramel Apple Spice MartiniOnce, in a fairly decent chain restaurant, late one night after a holiday concert, I was intrigued enough to order a Caramel Apple Martini expecting something I wanted to just curl up in and take a nap. Instead what was brought to me was thin-tasting, bitter and gritty from the powdered cinnamon around the rim. The only thing it had in common with a real caramel apple was that it was sticky.

It’s so sad when a drink doesn’t live up to the menu’s hype.

Enter my solution: a dreamy, creamy caramel apple flavor with just a hint of spice. It’s definitely a dessert drink and even with less than 2 oz alcohol in there it’s pretty potent (the sugary ones always are). Sip it slowly and savor it.

Caramel Apple Spice Martini

1 1/4 oz Vanilla Vodka
1 1/4 oz Apple Juice
1/2 oz Caramel Sauce
1/4 oz Cinnamon Schnapps
Garnish: cinnamon-demerara sugar, apple slice, cinnamon stick

Combine the vodka, juice, caramel sauce and schnapps in a cocktail shaker over ice. Give it a good, long shake to toss the caramel sauce around and strain into a chilled cocktail glass rimmed with cinnamon-demerara sugar. Garnish with a slice of apple and a cinnamon stick.

The “secret” is to use a caramel sauce and not a syrup–the syrup will give a thinner mouth-feel and can have a very chemical edge to it. And yes, I mean sauce like you’d use for ice cream topping. When you mix the cinnamon sugar, go easy on the cinnamon–it really doesn’t take more than a sprinkle in a quarter cup of sugar (I prefer demerara for the natural color and large crystals) to get the point across without any grittiness.

For an extra treat, try sipping the drink through the cinnamon stick!

Medieval Cooking Challenge buttonIt’s the second month of the Medieval Cooking Challenge, an experiment where we take real Medieval recipes and prepare them in our modern kitchens, bringing the past into the present.

After last month’s Andalusian Lamb (which was a little complex), we’re going later within the Medieval period and a bit simpler in method of preparation. This recipe for a dried plum (aka prune–but don’t let the connotations of the word scare you off!) spread that is great on slices of baguette as an appetizer or an afternoon snack or used, as the name would suggest, as a tart filling or topping.

 

The original recipe is from 1587 England, from a book known as The Good Huswifes Jewell, 1587

To make a Tarte of Prunes [alternately spelled Proines]

Put your Prunes into a pot, and put in red wine or claret wine, and a little faire water, and stirre them now and then, and when they be boyled enough, put them into a bowle, and straine them with sugar, synamon and ginger.

Gotta love that creative spelling from back then!

The redacted recipe quantities I’ve taken (and adjusted ever so slightly) from a fabulous modern book: Shakespeare’s Kitchenby Francine Segan. Not all of the recipes in this book reference their original Italian or English inspirations but some do, and it was indispensable as I planned my first Medieval feast for 60-80 people.

Spiced Plum Spread

1.5 cups Red Wine
9 oz Pitted Dried Plums (aka prunes, about 30)
3 Tbsp Sugar
2 Tbsp minced Ginger
2 Cinnamon Stick (2 inches or so)

Combine all ingredients in a large pot and simmer until most of the liquid has either been absorbed or evaporated and what’s left is very thick. Remove the mixture from the heat and remove the cinnamon stick. Mash the cooked mixture until a fairly smooth consistency is reached.

Step-by-Step Spiced Plum Spread

Makes approximately 1 cup.

Originally I’d suggested using crystallized ginger and adding it to the mixture between the cooking and mashing stages but decided to go with the minced ginger since I had it on hand. (I buy it in the tubes from the produce section–comes in very handy and keeps wonderfully!) You can use more or less of the ginger and cinnamon to suit your own preferences.

At this point what you do with it is up to you. You could go old-school and fill a single large or several small tarts shells with the mixture and serve it as is. Or you can serve it, warm, in a small crock with fresh bread and soft butter like you would a marmalade or jelly. Based on the rich flavor this dish provides, I’m thinking a topping for a cream cheese tart would be fabulous–the cream cheese only slightly sweetened so as to cut the richness of the plum topping the way vanilla ice cream can cut through the richness of a double-chocolate cake.

If you have fresh plums available (I know we have a few left over from a recent farmers’ market trip) you can use them in addition to or instead of the dried variety but you’ll need to use more of them to start with as well as more sugar (drying concentrates the fruit’s flavor and sweetness) and it will probably need to cook longer to give it enough time to thicken properly.

I’ve got a party coming up next month so I’ve stashed mine in the freezer to save until then–it’ll be a nice addition to the menu I’ve got planned.

ICC: Pudachi Wadi

It’s time for another installment of the Indian Cooking Challenge! And this month the authentic recipe I bumble my way through is the traditional Maharastrian Pudachi Wadi (aka Coriander Rolls). Now, for those who don’t know, in the United States coriander refers to the seeds (whole or ground) of the plant we call–in it’s leafy state–cilantro. Since we’re using the leaves, they’d be called Cilantro Rolls in our neck of the woods.

For many years I was not a huge fan of cilantro, and I’m not alone. The flavor was too pronounced, almost soapy in some instances and really was not my cup of tea. But the more worldly one eats, the more one is likely to encounter different flavors and, in time, I became more tolerant of the herb.

Good thing, too! Because these rolls are delicious and it would have been a shame to miss out on them if I’d never been willing to try cilantro again.

Pudachi Wadi

Pudachi Wadi

Dough

1 cup Gram Flour
1 cup Wheat flour
3/4 tsp Chilli Powder
heaping 1/4 tsp Turmeric
Salt, to taste
4.5 Tbsp warm Oil
Water, as needed

Paste:

3 tsp Oil
1.5 tsp Garam Masala
3 tsp Tamarind Concentrate

Filling:
3 Tbsp Shredded Coconut
1.5 Tbsp Poppy Seeds
1.5 Tbsp Sesame Seeds 

1.5 Tnsp Oil
1 Onion, diced
1.5 tsp Ginger-Green Chilli Paste
3 cloves garlic, minced

2 bunches Cilantro, chopped fine (approx. 2 cups)
3/4 tsp Chilli Powder
Half a Lime, juiced
1.5 tsp Sugar
Salt, to taste

Oil, for frying

This one takes a little time, mostly because of the different steps, but it’s worth a few hours on a weekend afternoon to give it a try. A large part of the time required goes into rolling and forming the dough. While it wouldn’t be quite the same, I’m betting the paste and filling would be fabulous inside regular spring roll wrappers and steamed or fried.

I did have to finagle one ingredient: the ginger-green chilli paste. I substituted equal amounts of minced ginger paste and green salsa. Having never had the original, I can’t say how close I came but it seemed a logical substitution. If we’d had any in the house, I probably would have used Recaito, as it’s cilantro-based.

Combining the dough ingredients Make the dough. 

Mix the dry dough ingredients together and then stir in the warm oil. Depending on things like your flour’s water content and the humidity in your kitchen, the amount of water you’ll need to add to the mixture to make a smooth dough will vary. Just mix it in a teaspoon or two at a time until the dough is firm.

Set aside.

The paste ingredients Make the paste. 

Combine the oil, garam masala and tamarind concentrate into a smooth paste and set aside until it’s time to
assemble the pastries.

Toasting the coconut, poppy and sesame seeds Make the filling. 

Toast the coconut, poppy seeds and sesame seeds in a non-stick skillet until the coconut and sesame seeds are golden brown. Allow to cool.

Sauteing the onions, garlic and ginger green chilli paste Meanwhile, saute the onions in the oil until tender. 

Add the ginger-green chilli paste and garlic and saute briefly—just a few seconds–before removing from the heat to cool off a bit.

Grinding the toasted ingredients Process the now-cool coconut, poppy and sesame seeds until coarse. Really all you’re doing is breaking up the coconut as the others are already pretty small to start with.
Combining all the filling ingredients Transfer the onion mixture to a bowl and add the ground and toasted mixture, the chopped cilantro and the rest of the ingredients for the filling. Mix well and season to taste with additional salt as needed.
Rolling out the dough To Assemble the pastries

Divide the dough into 16 even pieces and roll each piece into a ball. Roll each ball into a circle (about 3 inches wide).

Adding the filling Then place a spoonful of the filling mixture in the center.
Wrapping the filling up Fold the edges of the dough over the filling and press them together to make a tight seal. It may help to add a little water to the edges of the dough.Apparently these rolls can either be round tubes–like a traditional spring roll–or triangles. I did some of each just to see if it made a difference. For what it’s worth, the triangular ones seemed to have a better distribution of dough and filling per bite.
Toasting the pastries Toast each roll or triangle lightly on a griddle. I almost skipped this step but am grateful I didn’t: the toasting firms us the dough so that they don’t fall apart so easily when you fry them. And electric griddle set on 250° worked perfectly for this as I could put one on, roll the next and flip the first when the second was added.
The final fry Deep fry the rolls just before serving. Frying goes quickly and, unlike a lot of fried foods, these do not float to the surface and bob around, they just sit there and cook so you need to turn them over after a few moments to keep them from getting too dark on any one side.

I think you’d also be safe making these up ahead of time through the toasting step and then refrigerating or even freezing them so you can fry as many as you need at any given time. Get a few people in the kitchen with you and bang out several batches at a go so you’re ready for anything. Because they don’t really hold all that great, we found, and reheating doesn’t do much for them once they’re fried.

Random Appetites: Hangover Cures

Ah, yes, we’ve all been there, haven’t we? Had a little too much fun at a party or just a night with friends at home and you find yourself a little green around the gills the next day. I know I’ve been there, but thankfully it’s a rare visit.

Now, most of us know that the biggies that cause that icky morning-after feeling are dehydration and stomach acid (oh, wait, you didn’t? now you do). Which is why the guidelines for staying safe are to drink a glass of water for every cocktail or beer you consume and then an extra glass or two before you turn in for the night (morning). That (and a couple of aspirin or ibuprofen before bed) will do a lot to prevent that splitting headache and squinting at the light the next time your eyes open.

The other issue, the sour stomach of too much sugar sent down the pipe (again, alcohol is sugar, folks, all breaks down to the same carbs, carbs, carbs in the final equation), can be both more or less difficult to manage, depending on your point of view.

A lot of party-goers know that a stop by the local all-night drive through (or stumble-to, judging by my last such experience) will make one feel better. The reason this works is that the fat helps coat your stomach and protect it from some of that excess acid that gets churned up trying to deal with the excess sugars in your system. Plus the protein from a burger or chicken finger will give your body something else to work on in the interim.

When I was in culinary school the subject of drinking came up (go figure). You know why so many chef’s drink? It’s because you stare at food for hours and hours, late into the wee hours, and need to do something else when it’s all over (or to get through, depends on the chef); at least that was our chef’s position on the matter. As such, chef’s have a great wealth of ideas on how to get rid of (or prevent) a hangover. This was my favorite.

Hangover Sandwich

2 slices of good bread
Butter
Mayo
Smoked salmon
Bacon
Horseradish or mustard (optional)

Spread the butter on both sides of the bread and saute in a hot pan until golden, essentially making two large, French-style as opposed to salad style, croûtons. Spread some mayo on one side of each crouton and layer on the smoked salmon and bacon. You can add horseradish sauce or mustard to taste, it’s up to you, but the butter, salmon and bacon really are the key parts due to the fat and protein gains. Eat up!

I’ve never actually had to make use of that recipe, but it’s nice to know I’ve got it in reserve.

There other prevailing theory on hangover cures seems to revolve around the idea of “hair of the dog” in one way or another.

First off is just to get up and keep drinking. Not necessarily a lot, just enough to take the edge off; a good time for a Bloody Mary or Mimosa. Speaking of Bloody Mary’s, it occurs to me to wonder about adding more acid to an already roiling stomach. Aside from the nutrients and vitamins in the tomato juice (or o.j., for that matter), adding more acid is the hair of the dog, as well, just a different breed. But I still think water is the best thing to drink after a late night with one (or three) too many.

Another popular remedy that I hadn’t considered before is eating spicy food. Now, I don’t know about you but I’m not really down for Mexican or Thai when I’m feeling green, but some friends swear that the spices help to “sweat out” the toxins and speed the recovery process. I’ll leave that to them, frankly, and just try not to over-indulge in the first place.
