I don’t usually post recipes, here, but today I’m making an exception. Strawberries have started to appear in stores and, while it’s still early in the season, the temptation is there to make something of them. This recipe would be a nice in-between step between now and when spring and summer shortcakes come around.

Company was coming for dinner and we’d picked up some early-season (but so fresh you could smell their sweetness as you walked past the flats) strawberries with a vague plan that they would comprise dessert.

But a vague plan only gets you to a few hours before dinner. What to do with them?

Sure, there’s the usual pie, shortcake or cobbler but I wanted something more cake-like.

For Christmas Eve I’d made the Caramel Apple Cake from Food Network Magazine, which was similar in concept to a pineapple upside-down cake and we really enjoyed the combo of dense cake and moist fruit. To make a strawberry-friendly version, I headed to Joy of Cooking for a basic Sour Cream Coffee Cake recipe (skipping the streusel) and added in a layer of strawberries between each half of the dough.

The addition of the strawberries and the change in baking pan from the original recipe meant it took twice as long for the cake to bake. And I worried that skipping the streusel topping would result in a blah cake.

Thankfully, our guest proclaimed it a very successful experiment.

Hidden Strawberry Cake

(adapted from Joy of Cooking)

4 Tbsp unsalted butter
1 cup sugar
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup plain Greek-style yogurt
1 tsp vanilla
2 large eggs, beaten

Strawberry Filling

1 pint fresh strawberries
1-2 Tbsp cinnamon
1/4 cup brown sugar

Strawberry Topping

1 pint fresh strawberries
2 Tbsp demerara sugar

Preheat your oven to 350 degrees Fahrenheit and prepare an 8-inch square pan.

In a stand mixer, beat together butter and sugar until light-colored and fluffy.

Meanwhile, combine flour, baking soda, baking powder and salt in a medium-sized bowl and stir until combined.

In a small bowl combine the Greek-style yogurt and vanilla.

Scrape down the mixing bowl and then, on low, add the dry and wet ingredients in batches to the creamed butter and sugar: 1/3 dry, 1/2 wet, 1/3 dry, last of the wet, last of the dry. Scrape down the bowl and mix in the beaten eggs.

Stem, hull and slice 1 pint of the strawberries for the filling.

Spread half the batter into the bottom of the prepared pan. Scatter the sliced strawberries in an even layer over the batter, sprinkling with cinnamon and brown sugar. Carefully spread the remaining batter over the top of the strawberry layer.

Bake for 45-55 minutes, until the cake is golden brown, the edges pull away from the sides of the pan and a knife inserted into the center comes out clean.

While the cake bakes, take the remaining pint of strawberries and stem, hull and slice them. Place them in a bowl with the demerara sugar (or other raw sugar), cover and refrigerate for 1 hour or until you’re ready to serve the cake.

Let the cake cool in the pan for 10 minutes and then unmold to a serving plate to cool completely.

When ready to serve, top each slice with some of the sugared strawberries.

The strawberry layer does sink a bit, instead of staying firmly in the center but the flavor is just fine regardless of the shift. The hint of cinnamon is just enough to spice the whole cake and the extra strawberries on top (along with the juices the sugar helps draw out) add a touch of moisture to the top of the cake. If anything, a little freshly whipped cream might also be added, but it’s certainly not necessary to enjoy the cake as-is.

After many changes of hands and disputes over the years, the free Territory of Colorado was organized by outgoing-President Buchanan in February of 1861. Named for the Colorado River, it would more than 15 years before Colorado would officially become a state in August of 1876–100 years after we declaration our independence from British rule–with boundaries made up of latitude and longitude markings, not natural boundaries (and it’s only 1 of 3 states like this).

While gold and silver were big pulls to the Centennial State in the 1800s, more than half the Colorado population is settled in the greater-Denver area where industry and agriculture now hold sway. Denver, Aspen and Boulder are well-known foodie destinations but the natural splendor of the state’s many parks, forests, trails and refuges help keep the population fit and healthy. It’s also making a name for itself in wine–both the grape and fruit-based varieties–while maintaining the largest annual production of beer in the country.

Of course, what I first think of, when Colorado comes to mind, is John Denver. Now, granted, he’s not a native son but he was adopted as their official Poet Laureate in 1977 and his song, Rocky Mountain High, is one of the 2 state songs for Colorado. I went through a bit of a folk music phase about 10 years ago and Denver was one of my favorites. Even so, I’m still finding songs of his I didn’t know were his to begin with. If I had to narrow it down to a top 5, just off the top of my head, the list would include:

  • My Sweet Lady
  • Wild Montana Sky
  • Goodbye Again
  • A Song for All Lovers
  • Perhaps Love (with Placido Domingo)

And, oh, 5 is not nearly enough but, well, I’m digressing and there’s a cocktail to get to!

Ahem.

Earlier I mentioned that the borders of Colorado are based on lines of latitude and longitude. Apparently, though, the surveyors charged with marking the official border faced some challenges while tracing the longitudinal border with Utah resulting in “several nearly imperceptible kinks.”

Oh, that’s just too good a phrase to pass up. Hence…

The Imperceptible Kink

1 oz Sleepytime-infused Tequila*
1/2 oz Peach Nectar
1/2 oz Beer

Combine over ice and shake vigorously–not quite like crossing the Continental Divide, but close. Strain into a chilled cocktail glass.

*To Infuse Tequila: Heat 2 oz of Tequila until steamy and fragrant and remove from heat. Add 1 Sleepytime tea bag and steep for approximately 2 minutes. Remove the tea bag and let the mixture cool until ready to use. Tip: this smells great but don’t inhale too deeply or you’ll find yourself choking on the alcohol fumes. Not that we did that or anything…

Colorado boasts a significant Hispanic population, so we’ve got a Tequila base to represent that. I’ve had cocktails served to me with both tequila and beer, and with Coors being a Colorado company and all the microbreweries there, it seemed a natural addition. Peach is apparently one of the common fruit-based wines produced there but I was still looking for something else–something to give that hint of imperceptible kink!

Enter Celestial Seasonings, a Boulder company since 1969. I have several of their products in my tea cabinet and felt Sleepytime, with its definite floral taste and aroma, would pair perfectly with the botanical taste of tequila. The end result is a cocktail with a clean, crisp feel, a hint of peach and beer at the end and that little something else that you’re not quite sure about. That’s the infused tequila.

Today’s Cowl

If you read a lot of historical novels and the like, you probably think of hooded monks when you hear the word cowl. Why would anyone want to wear one these days when hoodies (which, by the way, I cannot comfortably wear to save my life) are so easy to find?

That’s not what I’m talking about, here.

Today, a cowl can just as easily refer to a knitted tube, worn around the neck like some cross between a fluffy necklace and a scarf  but without the tails. Some cowls–often called clouds and knitted in wonderfully fuzzy mohair for a nebulous effect–are long enough to pull over the head like a hood and keep the ears warm and toasty.

My version was a product of a single skein of camel-colored wool found at Tuesday Morning while shopping for new bath mats and some time on my hands post-move. I’d been itching for a simple knitting project to keep my hands busy and, after flipping through my copy of One-Skein Wonders I settled on the Sofia Cowl. It was a simple lace pattern that kept my hands busy a few nights and gave that awesome sense of instant gratification that good, quick knitting projects always do.

After playing around with my newest accessory, I came up with several variations: these were my top 3:

  1. Fold the back of the cowl down, doubling the warming layers around the nape of your neck, and pouf out the front to fullness. This looks great peeking out of a coat or v-neck sweater–a great way to transition from Fall to Winter and Winter to Spring when you may not need full-on bundling but a little extra warmth wouldn’t hurt.
  2. A fun, slouchy, casual look can be achieved by twisting the tube inside itself a few good turns to create a continuous spiral effect. Try it against a contrasting turtleneck or just on it’s own as a statement accessory.
  3. My favorite look is to arrange it high in the back and fold the edges over at the neck, securing with a pin or clip (like the large French twist clip in the photo–think outside the brooch!). This looks so nice and tailored that it can work as a wardrobe element, not just a cold-weather protector.

Nearing the end of our Art of Dressing arc, here’s the conclusion to my personal mission to decrease my fashion holdings.

Do you know how many pieces of clothing I had between my closet, dresser and in the laundry?

306.

Three hundred and six garments. And that’s not counting things like undies, bras or pairs of socks.

Now, my goal was to get rid of 1/3 or 33% of my clothes. That meant over 100 items out of the closet and dresser drawers.

But I’m getting a bit ahead of my day, here.

The best tactic seemed to be to, first, take everything out of the closet and dresser and sort them into some obvious categories:

  • Frequently worn tops
  • Frequently worn bottoms
  • Almost never worn anything
  • Items with potential fit problems

After the closet, alone, it was looking about 50/50 between the frequently-worn and the problem children. Once I emptied the dresser, though, things shifted a bit. It appears I’d been holding on to more casual-wear clothes and t-shirts than I’d realized. Granted, I’ve gotten into the habit of switching into pajama or yoga pants and tank tops or the like almost as soon as I get home from work so my collection of lounge-wear has increased over the last year or 2.

The items that were in the definite keep piles went straight back into the closet to free up space on the bed. I’ll admit that the closet looked rather bare with only those few pieces in it.

Now was the time I was dreading: trying on the iffy things and being brutally honest in the process. It was like going shopping and dealing with the dreaded dressing room, times 50 or so.

There were a few pieces that I’d put in the fit issues pile that fit better than I’d thought. Some went into a maybe pile (you know, the if-I-lose-5 pounds-these-might-not cut-off-my-circulation-when-I-sit-down borderline cases) and a several went back into the closet.

I thought I’d hit the jackpot when I put on my old black jeans and they were loose. Loose! Just as I was wondering how in the hell that had happened I checked the tag and realized I’d put my new black jeans in the wrong pile. The old black jeans were still just as tight as they’d been the last time I wore them and into the give-pile they went.

Try on. Take off. Rinse. Repeat.

And, yes, I did get rid of some frequently worn, fits but does not flatter at all items.

I’m so proud of myself, I might just have to go shopping. (kidding!)

Why Don’t I Wear This Anymore?

Doesn’t fit, forgot I had it, it looked better in the store… the reasons were plentiful and almost everything in the hardly wear pile went into the give-away one, instead.

All of the above took about 3 hours (far less than I thought it would) and I started counting each piece as I put it into the large box I’d snagged from the move for the purpose.

At the time I didn’t know how far that got me to the goal. It was only then I started counting how much was still hanging in the closet:

  • 112 pieces hanging up
  • 45 in the dresser
  • 51 items in laundry-transit

Add in what I’d already tossed (and the 6 items I set aside as wearable but in need of minor repairs), and we get the aforementioned mind-blowing 306.

This meant I was 9* pieces away from my goal.

Though the final cull was a bit tougher–I ended up giving up pieces that I really liked but knew weren’t a perfect fit (literally or figuratively)–I’m so happy that, for once, my closet isn’t stuffed to the gills and bulging at the seams. There are a few holes in my wardrobe, now (all of my brown slacks, for instance, ended up being tossed) and I’m in a jeans-liking phase again so I want a few more pairs of the type that fit well (I only own one each of blue and black), but those will be purchased with a clear conscience, knowing that I have the room and will wear them instead of buying just because they’re there.

All of the clothes that I’m giving away filled (to practically bursting) a large packing box from U-Haul that proudly proclaims it’s capacity as 4.5 cubic feet. All will be on it’s way to Goodwill very soon.

*Yes, I realize I rounded down. As soon as the repairman comes to fix the washer and dryer that was delivered less than a week ago and I get a chance to finish my laundry, I promise to toss one more (clean) piece of clothing into the to-go box to make it exactly 33%.

I think I’ve been both looking forward to and dreading getting to the 37th state: it’s Todd’s home state and so there’s a little extra pressure to come up with something stellar. Am I up for the challenge? Let’s see…

The Cornhusker state came to be on March 1, 1867, just a couple years after the end of the Civil War. It’s name means “flat water” (for the Platte River) and it’s a good thing it’s got those rivers running around and through it as it’s landlocked three times over. Another curious fact is that Arbor Day began in Nebraska; curious because the early homesteaders (who came for the free land grants a la Far and Away) built homes out of sod because trees were so scarce.

Being smack dab in the middle of the country, it’s no surprise that railroads are big in Nebraska. The state hosts the Union Pacific headquarters and Bailey Yard (only the railroad classification yard–where they sort and switch cars and tracks–in the world).

When we visited Nebraska in 2010, I was amazed at the richness of the soil, the fact that seems just seemed to grow anywhere they were planted, and the number of wineries we found spread throughout the state (too late to visit any, though). The local food of fame, the Runza (aka Bierock), was sampled, as well as the eponymous Omaha Steaks.

Something we were glad we didn’t need to use was the 911 system (developed and first used in Lincoln).

And with that bad segue in place, here’s this week’s drink.

The Strobe

3/4 oz Bourbon Whiskey (like Jim Beam)
1/4 oz Goldschlager
1/2 oz Grenadine
1 oz Club Soda

Combine whiskey, goldschlager and grenadine over ice and shake like a tornado roaring down the plains. Strain into a chilled cordial glass and top with the club soda.

If you think it looks a little like Kool-Aid, there’s a reason for that: in 1927 Edward Perkins created the famous powdered beverage in Hastings, Nebraska. I may not keep the stuff in the house but the grenadine goes a long way towards making this drink look like it’s predecessor. The Goldschlager is a nod to the start of the Black Hills Gold Rush in Sydney and, well, it just wouldn’t be right to have a drink for the Cornhusker state made with anything other than a corn base, would it?

And, of course, it’s named after another Nebraskan invention: the strobe light was invented by Dr. Harold Edgerton of Aurora. Too many of these and you might be seeing spots of light, yourself!

But did the drink pass the Todd-test? With a response of “refreshing,” I think it passed.
